Nucleation tank

Bubbles do not form in the open liquid — they need an edge, a scratch, a speck of dust. That is a nucleation site, and it is why a scratched glass fizzes down its own flaw line. Warmer soda holds less CO₂ ( of saturation at the current temperature), so the tank fizzes harder and dies faster as you warm it.

Real chemistry

Butterfly pea flower is full of anthocyanins — pigments whose structure, and so whose colour, depends on pH. Alkaline: teal. Neutral: the deep indigo in the can. Add lime and the molecule re-folds: violet at pH 5, hot pink by pH 3. This is the exact mechanism in a poured glass of Mood Ring, not an artist's impression of it.

The button in the header is also an experiment. Pressure in a shaken can does not rise because gas is created — it rises because shaking sheds thousands of micro-bubbles into the liquid, each one a ready-made nucleation site. Open it and they all vent at once. Hold the button and see. We did warn you.
